Sri Lankan Style Small Fish Curry

Sri Lankan Style Small Fish Curry

Small fish are a good source of protein and good for health if you eat non-veg food. On the other way, small fish are with lower mercury level. But, most don’t like to eat small fish because of the small bones. If you eat, you have to be more careful. Usually, I also prefer to deep fry small fish, but still I cook those in a curry.

Devilled Prawns in Sri Lankan Style

Devilled is a preferred term for Sri Lankans when it refers to many Sri Lankan dishes. Be it chicken, fish or seafood, most Sri Lankans like to eat a devilled dish. The term indicates a really hot and spicy dish. Usually a devilled dish has a reddish appearance, but it is not from red chilly. Actually this red is from the tomato sauce use for the dish. A devilled dish always gives a mix of sweet, hot, spicy and a tangy taste.

Pan Fried Pomfret Fish

Pan Fried Pomfret Fish
Pan fried fish
It is not a secret that most of us like to eat fried fish. Sometimes we don’t care the health benefits when it comes to the concern about the taste. A fried fish with crispy outside and flaky inside makes a mouthwatering dish for anyone. But how do you fry it keeping the maximum nutrient value? Select pan frying instead of deep frying. Always pan fried fish are better than deep fried fish.

Spicy Prawns in Chili Sauce

We usually like seafood and specially prawns.Once I cooked prawns by preparing a ground spices paste including red chili. It was spicy, but still good as a spicy seafood dish.Though the name says chili sauce,I didn't use any store bought chili sauce.Instead I allowed to cook chili paste and tomato until it become a sauce and after that I added prawns.

Tandoori Style Prawns

Tandoori Prawns? Normally we hear Tandoori chicken, isn’t it? Oh my Indian friends, you don’t laugh at me. I am a fan of Indian foods. Last week I was craving for Tandoori Chicken, but when I checked my freezer, I didn’t have any chicken. Anyway I had some prawns. Can’t we try Tandoori Prawns?

Yes,it came out well & was tasty.

Here is my recipe

About 100g prawns cleaned, washed
1 cup plain yogurt
1 tsp chili powder
1 tsp Garam Masala (Sri Lankan friends, If you do not have Garam Masala, don’t worry, use some SL roasted curry Powder)
¼ tspn turmeric powder
½ tspn salt
1 tsp ginger & garlic paste
Juice of half of a lime
2 tbspn oil
Red or orange coloring few drops

Mix all spices together & mix with yogurt. You can whish with a fork to get a smooth paste. Then add lime juice too. Mix well.
Add a drop of coloring to the mix & combine well.Tandoori food is always in red/orange colour, Authentic recipe is with some another ingredient which gives the color.
However nowadays edible colors are the option
Adjust the color & prepare the marinade.
Now add prawns to this mix & keep marinating for few hours or at least for 15 minutes.

The correct method is to use a Tandoori oven. But nowadays recipe has changed to use with an electric oven.
Bake the mix in an oven 450 degrees to about 25-30 minutes or until all the juice absorbed.

However I used pan fry method.
Heat 1 tbspn of oil in a flat bottomed pan.
Once the oil is hot, add the mix to the pan.

Allow to cook in very low flame until all the juice evaporated.
Turn the prawns time to time.

Tandoori Prawns are ready to serve.
(If you cook Tandoori Chicken, recipe is the same & use chicken instead of Prawns)

Then add all spices & curry leaves, green chilli  & lemon grass & mix well.
When the onion looks tender add tomato & stir fry until it makes a paste.

If the paste looks very dry add little water & mix well.
Then add prawns & mix well.

Add some more water & cook covered for about 10 minutes until prawns done & until you get thick dry gravy.

Adjust salt & adjust the thickness of gravy by adding some more water.(As you desired)
