Mini Cake Bites


I loved making these mini cakes. I selected heart shape as it is almost near to Valentines Day. 


The method was so simple. I decorated these on today morning for my brother & family (specially for my niece) as they will visit me today.I am excited & eagerly waiting to see them.Hope they will like these mini cakes.




Here is my recipe:

Ingredients

1 cake recipe (I used a simple butter cake)
1 cup Buttercream icing for decorating
Glace Icing


Special equipment

Small heart shaped cookie cutters


Method

First pre heat the oven & make the cake according to the recipe. I prepared a butter cake & shred the recipe here.

After the cake is done, allow to cool it completely for about 20 minutes. Then wrap with a plastic wrap & freeze for at least 1 hr.However I kept it in the freezer for about 1 day. This will make it easier to cut the cake.

 After 1 hr, take the cake out & remove the wrap.Then slice it.
Using a cookie cutter cut  small heart shaped pieces from the slices.
(While cutting to heart shapes, some of the parts have to be discarded. I used those discarded parts in cake pops)

Now heart shaped cakes are ready & need to decorate.

I used Glace icing to cover them.(mix 100g icing sugar (sifted) with about 15ml water,whisk well,add water slowly to the icing sugar until desired thickness is achieved)


Then decorated with some butter icing.






Sri Lankan Dhal Curry (Parippu Curry)

 


Actually I don’t like to eat dhal curry much. But I love to cook it. In Sri Lanka almost all people like this curry even everyday. It is same with my husband too. Sometimes I fed up by seen this everyday, but this is something I can cook without thinking other’s preferences. Also this is a must have curry in any festive/special occasion.
We have few different methods of cooking dhal curry. Here I am going to share one method of cooking dhal in Sri Lanka.


Ingredients:

1 cup dhal
1/2onion sliced
1 tsp red chili powder
1 sprig curry leaves
1inch piece pandan leaf/(rampa)
¼ tsp turmeric powder
1 tsp raw curry powder
1 tsp fenugreek seeds
Piece of cinnamon
Salt to taste
1/2 cup thick coconut milk
1 cup thin coconut milk

For Seasoning

2 tbspn oil
1 tsp mustard seeds
2 dried red chili
Sliced ½ onion
Few curry leaves

Method

Wash dhal properly few times.
Add all the spices together with, onion, rampa & curry leaves.
Mix all & add thin coconut milk & allow to cook in medium flame.


Once dhal is cooked add thick coconut milk. Stir well.
Adjust salt to taste.
Simmer few minutes. & remove from the flame.

Same time heat another pan & add oil. Once oil is hot, add the ingredients under seasoning. Once onions are tender & golden brown; add this mix to dhal curry & mix well.

Serve & enjoy!!

Simple Butter Cake



This is my basic butter cake recipe. I found this is easier to make & came out well. And though I try to decorate cakes,I like butter cake without any icing on it. :)

Ingredients (For 8inch/ (20 cm) baking pan)
200 g Butter in room temperature
200g sugar
200g flour
3 large eggs in room temperature
2 tsp Baking powder
1 tsp vanilla essence
2 tbs milk

Method
Preheat oven for 350F.Grease the baking pan. Line the bottom of the pan with a parchment paper
In a bowl combine flour & baking powder, Sift, keep aside.
Beat butter & sugar together in low speed for 2 minutes. Then gradually add eggs for this mixture and mix in high speed for about 2 minutes until the batter become smooth.
Then add vanilla essence & milk.
Also gradually add flour while beating.
Once it becomes a smooth batter, fill the baking pan with batter.
Bake for about 40 to 45 mins or until golden brown.
A tooth pick inserted to cake should come out clean when it is baked.
Allow to cool the cake few minutes & transfer to a wire rack.
Cool completely before any decorating.
