Chocolate Wafer Cookies



Here is my first ever try of baking cookies. I always like to try easy & short cut recipes. If I see such a recipe, I can’t wait until I try them. This Chocolate wafer cookies recipe was linked to last week’s Midweek Fiesta #8 by Tools for Kitchen & I wanted to try them.

The taste was so good & I am happy with my first ever cookies.I used quantities for 12 cookies.

Ingredients (12 cookies)

½ cup Flour
½ cup sugar
4 tspn  cocoa
¼ tsp baking powder
¼ tsp salt
¼ cup butter
1 tspn milk
Powdered sugar to sprinkle on top of cookies (optional)

Method
First sieve flour, cocoa & baking powder together. Mix salt with it.
Beat sugar & butter together. Add milk to it. Then mix with powdered ingredients & form dough.


Form the dough into a roll shape, wrap it & keep refrigerated for about 20 mins.


Preheat oven to 300F.

After 20 minutes, take the dough out from the fridge. Easiest way is to cut the dough into thin slices.
However I flatten them using the roller. Then cut into circular shape using a cutter.
Then sprinkled some powdered sugar into a shape of flower. (Optional)
Bake the cookies on a lined tray for about 20 minutes.
Cookies are ready to serve.



(Note: My baking tray was enough for 11 cookies with space among each cookie, But I anyhow baked 12 cookies at once, But due to expansion while baking, the shape was bit odd, not exactly circular :) )


Potato curry




This potato curry is delicious with rice or any type of roti. Also it is easy to prepare within few minutes. I use the steamer tray of rice cooker to boil potatoes & it saves time for me.

Ingredients (3-4 servings)

2 medium sized potato
1 tomato sliced
1 onion sliced
1 tsp chili powder
1 tbs raw curry powder
¼ tsp turmeric powder
1 tsp mustard seeds
1 tsp fenugreek seeds
Piece of cinnamon stick
Curry leaves
Piece of a pandan leaf (rampe)
Oil
Thick coconut milk ½ cup
Salt to taste

Method

First boil potatoes.Peel them & cut into pieces.
Then mix all spice powders with potato & keep aside.

Heat about 2-3 tbspn oil in a pan.
When it is hot, add mustard seeds.
When it is pop out, add onion.
Once onions are tender, add the potato mix & mix well.
Then add tomato & curry leaves/rampe. Mix well.
Cover & cook for few minutes.
When all tomato pieces have become soft & look as a sauce, add thick coconut milk.
Adjust salt to taste. Allow for simmer few minutes in low flame.
If you want more gravy, add some water or if you do not like, make the gravy to dry.
