I am a winner of a contest !!!!!

Wow!! I am so excited today. Do you know why? I won a contest and this is my first ever food contest participation. You all know I have been hosting a food contest every week, but I didn’t get a chance to participate. Now I know the excitement of winning a contest.
Last week, PureFreshDaily Facebook page announced that they are going to host a contest.The theme was a dish using Apple or Pears. I really wanted to participate. Anyway I didn’t have much time to try a recipe as it was the weekend. Oh!! Weekend is the busiest time than weekdays, but I could manage of preparing a smoothie using Pears.

Spicy Rice

This is another rice recipe which we love to eat. This is bit spicy but we can adjust the amount of spices according to our taste.

 
Here is the recipe.

Ingredients (For 2 portions)

2 cups of rice
1 onion sliced
2 cloves
1 cardamom
1 inch stick cinnamon
1 tsp chili powder
1 tbspn curry powder
¼ tsp turmeric powder
Butter or vegetable oil
Salt to taste

Method

Wash rice & keep aside to drain water.
Heat 2 tbspn butter/oil in a pan, once it starts smoking; Add onion & sauté.
When the onions are tender, add cloves, cardamom & cinnamon.
Now add rice. Mix well
Allow to fry for about 5 minutes, but keep stirring.
Then add other spices & mix well.
Fry until rice start to pop out.
Then add correct amount of water & cook rice. Add salt, about 1tspn too.
In this stage, I normally transfer rice to the rice cooker .I use 1.5 cup of water for 1 cup of rice.
Once the rice is cooked, serve hot with any curry.
I used some Tandoori  style prawns to garnish.



Tandoori Style Prawns


Tandoori Prawns? Normally we hear Tandoori chicken, isn’t it? Oh my Indian friends, you don’t laugh at me. I am a fan of Indian foods. Last week I was craving for Tandoori Chicken, but when I checked my freezer, I didn’t have any chicken. Anyway I had some prawns. Can’t we try Tandoori Prawns?

Yes,it came out well & was tasty.


Here is my recipe

 
Ingredients

About 100g prawns cleaned, washed
1 cup plain yogurt
1 tsp chili powder
1 tsp Garam Masala (Sri Lankan friends, If you do not have Garam Masala,don’t worry, use some SL roasted curry Powder)
¼ tspn turmeric powder
½ tspn salt
1 tsp ginger & garlic paste
Juice of half of a lime
2 tbspn oil
Red or orange coloring few drops

Method

Mix all spices together & mix with yogurt. You can whish with a fork to get a smooth paste. Then add lime juice too. Mix well.
Add a drop of coloring to the mix & combine well.Tandoori food is always in red/orange colour, Authentic recipe is with some another ingredient which gives the color.
However nowadays edible colors are the option
Adjust the color & prepare the marinade.
Now add prawns to this mix & keep marinating for few hours or at least for 15 minutes.


The correct method is to use a Tandoori oven. But nowadays recipe has changed to use with an electric oven.
Bake the mix in an oven 450 degrees to about 25-30 minutes or until all the juice absorbed.

However I used pan fry method.
Heat 1 tbspn of oil in a flat bottomed pan.
Once the oil is hot, add the mix to the pan.


Allow to cook in very low flame until all the juice evaporated.
Turn the prawns time to time.


Tandoori Prawns are ready to serve.
 
(If you cook Tandoori Chicken, recipe is the same & use chicken instead of Prawns)
