Cauliflower and Tofu stir fry

Cauliflower is a veggie that I used to cook in many ways. However Tofu is new for me. But I have tasted it. This is the first time I cooked tofu. Anyway while cooking I was scared because of its softness. :)

Ingredients

Tofu (half of the standard size pack)
1 stem of cauliflower
½ carrot cut into pieces
1 onion sliced
1 green chilli
Curry leaves
1 stick cinnamon
1 tsp chilli powder
½ tspn fengruik seed
Salt to taste
Oil for frying




Method

Remove the water of tofu. Then use   a paper towel to absorb water from tofu if any.
Cut it into small cubes.
Wash & cut cauliflower into small florets.
Mix all ingredients except tofu, with cauliflower & keep aside.
Heat 1-2 tbspn oil in a pan.
Once oil is hot, add tofu.
Carefully stir & make the tofu to fry until it gets golden colour.


Then add the cauliflower mix.
Mix well but carefully, not to break tofu cubes.
Cover with a lid & cook for few minutes until cauliflower is done. Add small amount of water if the mix is too dry.
Check for salt.
It is ready to serve.

Potato curry/stew with Spinach

 
This is a dish from Sri Lanka. We normally cook spinach mixing with dhal or potato.
Here I cooked spinach with potato. It goes well with rice.


Ingredients (2-3 servings)

1 large size potato boiled
1 onion sliced
½ tomato cut into pieces
About handful of spinach
2 green chili sliced
½ tspn fenugreek seed
1/4 tsp turmeric powder
½ tsp curry powder
Curry leaf
A cinnamon stick
1 cup thick coconut milk
½ cup water.
Salt to taste

Method

Wash, clean & cut spinach (here I have used another type of spinach) into about 2 inch size pieces. Keep aside.


Cut the boiled potato into cubes.
Mix all ingredients other than coconut milk & spinach in a pan.
Add about ½ cup water & cook for few minutes
Once tomato & onion tender; add spinach into it & mix well.
Then add coconut milk & adjust for salt.
Simmer for few minutes while stirring.
It is ready to serve.
