Garlic curry (Garlic kalu pol maluwa)

Garlic is just a magnificent ingredient with many benefits. As I learned from my mother, it is very beneficial in lowering the Cholesterol level. Using garlic in our food is the better way to avoid heart deceases. When I was with my parents, my mother used to cook a garlic curry at least once in  a month because of the benefits of garlic.
 


Now it is my turn. I want to think of the health of my family. Therefore thought of continuing my mother’s practice.
Here is one way of we consume garlic as main ingredients

 



Ingredients (for 2 portions)

2 medium size Garlic (which has totally about 20 cloves)
About 3 tblspn grated coconut
1 tspn Chili powder
1 tspn curry powder
¼ tsp turmeric powder
1 inch piece Cinnamon
½ tsp fengruik seeds
1 tsp white rice
½ of a tomato sliced
1 sprig of curry leaves
½ cup thick coconut milk
Salt to taste


Method
Peel & wash garlic cloves.If the cloves are very big,just cut into halves.
Keep it aside.


In a pan, roast grated coconut & rice together until golden brown. Keep aside.

Again roast chili, curry powder & turmeric powder until brownish. Do it carefully without burning.

Now grind all these roasted ingredients & also tomato slices together into a paste.
Mix the paste with garlic, add curry leaves & other remaining ingredients. Add some water & cook in medium flame.

Once the garlic is cooked, add thick coconut milk & adjust salt.
Simmer for few minutes & remove the pan from the burner.
Serve hot with rice or any type of roti.

The spices mentioned above are as per my taste. However you can adjust it & cook a very tasty dish.

Carrot Rice


This is a super delicious rice recipe, quick & easy to make. You can offer a special meal to your family by adding some more effort to your normal plain rice. In another way, this is a good idea to use left over rice.
When I search for this recipe,I found many recipes. But I have done few changes to this recipe.(May be I have converted the recipe according to Sri Lankan style)


Here is the recipe.

Ingredients: (2 portions)



2 cup cooked rice (or cooked left over rice)
1 onion (sliced)
1 large size carrot
2-3  tsp Ghee/butter or any cooking oil
a small piece of cinnamon
2 nos cloves
a few sprigs curry leaves
Salt as per taste
1 tsp curry powder
3/4 tsp cumin seeds
1 tsp chili powder
A pinch of turmeric powder
1 tbs ginger, garlic paste



Method

Peel, wash & grate carrot
Heat oil in a pan.
When oil is hot, add ginger, garlic paste. When you feel the aroma, add sliced onion. Mix well
When the onion is becoming tender add curry leaves.
Then add grated carrot & mix well.
Sauté for few minutes.
Then add all the spices & mix well.

Add salt to this mix & taste for salt.
Then add cooked rice & mix well
Cook for few minutes mixing it well.
Adjust salt if need.

Serve hot

Fish Curry


Ingredients (2 servings)
  • 250g fish (Tuna is better)
  • 1 tablspn Red chilly powder
  • 1 tblspoons unroasted curry powder
  • 1 tablspn black pepper
  • 4 cups water
  • to taste Salt
  • 1 clove garlic
Method:
Wash fish and cut into cubes/pieces

Then mix in red chili powder, curry powder, black pepper and garlic

Add 1 cup of water & cook for 20 minutes.

Adjust salt to taste (adding coconut milk would give some more taste,optional)




Fried Spicy Squid with vegetable



Ingredients:
250g Squid

1     Medium onions, finely sliced

1    Carrot

Few leafy vegetables

4 cloves Garlic, finely sliced

1 tea spoon Finely grated fresh ginger

¼ tea spoon Ground turmeric

1 tea spoon Chili powder

1 tea spoon curry powder

1 Cinnamon stick

1 stalk Lemon grass

 Curry leaves

1 ½ tea spoon Ghee or oil for frying
Method :
  • Clean squid, by removing ink sac and discarding the head.
  • Cut into rings or pieces
  • Clean vegetables & onion & cut into pieces.
  • Heat oil in a pan & fry the vegetables & onion.
  • Then add squid & fry until well cooked.
  • Add all spices & mix well.
  • Taste for salt.
  • Serve hot with rice or with any other dish
