Few weeks ago I was at home after a busy working week, and wanted to try a new recipe. When I was browsing for a recipe, I found this Mini Mac and Cheese cakes!! Thanks Cooking with Mel for the original recipe.
I did few alterations to my recipe & it came out well.
Ingredients (For 6 mini cakes)
½ cup uncooked macaroni
1 ½ cup of Shredded cheese
1 ½ cups of Cereal, finely crushed.(instead you can use bread crumbs too)
4 tbs unsalted butter
1 tsp of all purpose flour
½ cup fresh milk
Pinch of salt
Method
Preheat the oven to 375 degrees Also move the oven rack to the lower third portion.
Meanwhile cook the macaroni according to product details. Add the pinch of salt to the water boiling with macaroni.
Keep the macaroni drained, after cooked.
Lightly grease 6 regular sized muffin tray or use muffin cups (oven proof)
In a bowl, mix crushed cereal,1/2 cup cheese & 3 tbs butter together.
Then divide this mixture among the muffin cups. Using hand or small spatula, press the mixture firmly into the cups.
Now keep a medium saucepan on the burner, heat it over medium flame.
Whisk remaining butter & flour.
Then gradually add milk with stirring well.
Cook for about 5 minutes until you get a thick mix.
Then add ½ cup cheese & mix well until the cheese melt well.
Now fill the muffin cups with this mixture (remember we have already lined up the cups with the crust before)
Sprinkle the remaining cheese on top of each muffin cup
Cool and enjoy mini cakes….
