Baked Cheese Rice


Serves 2
Ingredients:
2 cups cooked rice (left over rice is better)
grated carrot,
Sliced onion
3 cloves garlic, minced
2 tbsp butter
Shredded cheese - Mozarella or Cheddar
Salt & pepper to taste
(also can add chicken or any meat or sea food as your preference)

Methods:
Prepare 2 cups of cooked rice. Set aside.
Heat up butter in a wok, saute garlic and onion until fragrant.
Add vegetable mix & stir fry.If you mix some meet,then add it before addind the vegetables & make it well fry)
Then mix the  cooked rice, stir-fry until rice is fragrant & well coated with butter but not too soft.
Sprinkle some dried herbs or curry leaves, salt & ground black pepper. Mix well.
Transfer half of the rice to a baking dish & sprinkle some shredded cheese, mix well.
Then add the remaining rice. Sprinkle more olive oil on top.
Top or cover the rice with remaining cheese.
Bake at 350ºF until cheese is melted but not golden brown. In this way, you will have creamier cheese taste.(about 15 mins)
Remove from the oven. Sprinkle some  black pepper if you prefer spicy taste
Serve hot.

Note:
• You can choose your own selection of vegetables & meat.
• The amount of cheese adding can be decided with your own taste.
This rice can be eaten with a salad. Not good with curries as we Sri Lankans normally eat.



Corn Rice

Ingredients (for 2 person)

  • 2 cups of  cooked Basmati or long grained rice
  • 1 tbsp oil
  • 1thinly sliced onions
  • 2 cloves of garlic ,minced
  • 1/2 cup fresh or frozen sweet corn
  • 1/4 tsp turmeric powder (if you prefer yellow look)
  • 1/4 tsp coriander powder
  • 1 tbsp lemon juice
  • salt to taste

Method
In a shallow pan, heat oil and saute the onions and garlic untill golden brown.
Add the coriander powder and saute for a minute.In this stage add turmeric powder if you prefer.
Add the corn and saute for a few minutes till the vegetables are cooked.
Then add the lemon juice and salt to taste and mix well.
Now it is time to add cooked rice. Then mix well.
Saute for a minute or so to let the liquids dry.
Serve hot with any spicy curry.
